The principles behind these ratings
  • Heme iron (red meat, organ meat, some shellfish) is absorbed very readily — the main thing to limit.
  • Vitamin C sharply increases absorption of iron eaten in the same meal.
  • Alcohol raises iron absorption and stresses the liver.
  • Tea, coffee, calcium, phytates reduce iron absorption — useful allies at meals.
  • Iron supplements & fortified products add iron you don't want, unless a doctor directs otherwise.
